Our Story
Cinnamon's Bakery opened in 2016 to provide locals and visitors alike with a truly one-of-a-kind, fresh-baked cinnamon roll experience. Since 2019, Cinnamon's has been owned and operated by classically trained chef Brian Goddard and has upheld the quality and standards of its original owners, Bob and Carol Fixter.
Goddard got his start in the restaurant industry at 15 as a busboy for Outback Steakhouse in Stone Mountain, Ga. He worked his way up through the ranks — serving, cooking, and eventually becoming kitchen manager. He later attended culinary school at the Art Institute of Atlanta, worked as chef de cuisine at the famed Ray's on the River before joining nationally recognized chef and restaurateur Kevin Rathbun as opening sous chef for KR Steakbar.
In 2019, Goddard and his family moved from Georgia to Colorado to pursue a once-in-a-lifetime opportunity — assuming ownership of Cinnamon's Bakery in beautiful Estes Park, Colorado. After a thorough training and transition period, Goddard launched Cinnamon's under new ownership. The business has grown exponentially since, serving more and more happy customers with each passing year while remaining true to the original recipe and only baking with the finest ingredients. Although a baker’s schedule can be long and strenuous, Goddard is grateful for this incredible opportunity and all the community support.
In his spare time, Goddard enjoys spending time with his family, listening to podcasts, drinking iced lattes, rocking out to Taylor Swift with his daughter, throwing the football in the backyard with his son, and following his many, many fantasy football teams.
